Touchee Pie

Once upon a time, recipes were often passed down through generations of cooks and never written down on paper. Such was the case in Steve’s family with Touchee pie. After enjoying this New Year’s delicacy for years, I asked Mom to give me the recipe. She laughed and said she didn’t really have a recipe, she just made it. She did agree to measure the ingredients and help me draft a recipe. Mom said the secret to the pie, is to make it to your own taste. When I wrote the title, I asked if I spelled it correctly. She said that looked correct to her.

Touchee Pie

3 lbs ground pork
2 lbs ground beef
1 cup mashed potatoes
1 cup crushed saltines
1 1/2 tsp all spice
1 tsp nutmeg
1/2 tsp sage or thyme
Salt and pepper

Cook the pork and beef together until done.
Mix in potatoes and then saltines
Add spices
Salt and pepper to taste

Scoop mixture into a prepared pie shell. Place top cover on pie. Bake in 350 degree oven until golden brown.

This pie freezes very well. I make several at one time and use them at a later date. They are so good, we enjoy them throughout the year and not just at New Years.
